Sweet Potato Pancake
A food  processor makes this recipe easy. 

Ingredients:

1 large sweet potato
2 russet potatoes
1 Onion
2 Eggs
1/4 tsp Salt
1/4 tsp Pepper
2 Tbs flour
Olive oil to coat pan

Optional:  apple sauce, salsa, or sour cream

Directions:

Cut onion, 2 russet potatoes, and sweet potato into pieces that will fit into food processor.

Add onion and eggs to food processor.

Run food processor until mixture is fluffy.

Add cut russet potatoes and sweet potato to food processor.

Add salt and pepper to taste.

Pulse food processor.

Add 2 tablespoons of flour through the top of the food processor while pulsing.

Continue to pulse until ingredients are well blended.

Allow batter to stand for 15 minutes to settle.

Add olive oil to a frying pan.

Heat frying pan on high.

Take a large spoon full of batter into your hand and drop on frying pan.

Fry each side for 3 minutes until golden brown.

After each side is golden brown remove from pan and allow to cool.

Serve.  Optional: top with apple sauce, salsa, or sour cream
